When it comes to a sweet treat, I always look for a rocky road, to me it’s the perfect yummy snack to fulfill all my cravings.
Especially for someone who has grown up unliking cream, butter icing, milk etc it’s so hard trying to find a sweet treat that you LOVE! So many times I’ve gazed upon the perfect tower of cupcakes covered in cream or butter icing and just pray that my taste buds have had a rethink and all of a sudden I love it, but no that’s never happened. So many people are surprised when I tell them I HATE cream, it’s so alien to them, but just ‘norm’ to me.
That’s when I first met rocky road, it’s the perfect sweet treat for me! It’s not got any milk, cream or butter icing in it, it’s just full of goodness! You can go as crazy as you like with it or as simple. So here is one of my favourite rocky road recipes- mint aero!
~ what you need ~
- 400g milk chocolate
- 125g golden syrup
- 125g unsalted butter
- 150g digestives (chopped)
- 113g mint aero chocolate bar pieces
- 75g white chocolate
- green food colouring
- mint aero chocolate bar crushed
- 100g mini marshmallows
~ let’s get started ~
Line a square baking tray with baking parchment and leave to one side.
Add the milk chocolate, golden syrup and unsalted butter in a large bowl. Melt on a low heat over a hob or in short bursts in the microwave and stir until smooth.
Take off the heat and leave to cool for around 3-5 minutes. Add in the chopped biscuits, mint aero pieces and marshmallows and fold carefully until mixed well.
Pour the mixture into the lined baking tray and smooth evenly, place in the refrigerator until solid.
Melt the white chocolate in the microwave in short bursts or over a low heated hob. Add a little bit of green food colouring to give it that ‘minty’ colour and drizzle as much as you like over your traybake- go crazy! Sprinkle on crushed mint aero pieces and make sure they stick to the melted chocolate. Pop into the refrigerator again until solid.
